Sandwich Express expanding, adding bake shop

That’s allowed him to add a major new bakery, something he’s been considering for five years. The shell is now up and work is underway inside.

Primbs is adding 770 square feet to the back of the building. Most of it will be dedicated to the bakery, to be called The Bake Shop, but he is also adding some office space.

Paul Knoblick Construction is serving as the general contractor on the project, valued on the building permit at $85,000.

Completion is targeted for June 1, but Primbs doesn’t plan to open The Bake Shop to the public for another month. He wants to get experience baking the breads for his McMinnville and Newberg shops for a time first, to work out all the kinks.

The new facility will feature a capacity of 34 trays, five times what Primbs can handle now. With that kind of capacity, Primbs said, he should be competitive for wholesale accounts as well.

In the process, he plans to increase the ranges of breads offered for sandwiches.

Primbs is also planning some interior remodeling.

He’s planning to relocate the office and extend the counter up front. He’s also planning to take orders up front for yeast breads, sweet breads, cupcakes and other sweet products.

A new sign and logo will be put up to identify the new companion business.

The expansion will lead to an increased staff, too. “We’re hiring right now,” Primbs said.

If he can generate enough new business to justify additional seating, he has a contingency plan. He’s planning to expand his parking lot regardless.

“I’m excited about it,” Primbs said.
