Classes offered in food preservation
The classes will meet at 6 p.m. Monday nights at the Yamhill Community Action Partnership, 1317 N.E. Dustin Court. YCAP has community kitchen facilities available, so students will be able to learn hands-on techniques.
The classes run $10 each. Scholarships are available.
The classes are:
* Canning Fruits, 6 p.m. Monday July 29. Instructors will cover techniques for preparation, liquids to use, basic equipment needs and safe methods for processing and storage.
* Pickling Vegetables, 6 p.m. Monday, Aug. 12, how to safely can pickled beans, asparagus, carrots and other vegetables. Instructors will cover selecting safe picking recipes, proper acidity levels of vinegars and methods of processing jars to ensure safety.
* Canning Tomatoes, 6 p.m. Monday, Aug. 26. Instructors will cover how to acidify tomatoes, homemade salsa and other basics of canning tomatoes.
